Created for the organic conscious consumer, Bill’s Organics’ breads are nutritious, non-GMO loaves containing nutrient dense grains. They use emerging superfood grains including Khorasan, spelt, teff, chia, quinoa, flaxseeds, barley and more.

Bill’s bread is made with real sourdough cultures that possess an extremely low pH of 4 (typical baker’s yeast is 5.5 to 6). The bread remains mould free, completely naturally and no artificial preservatives are required.

They create all of their delicious sourdoughs using pure and natural ingredients from certified organic farms and mill the flour using a traditional stoneground method. This slower, older method of milling avoids overheating and dehydration and retains nutrients and wheat germ, allowing the unique natural starter to slowly ferment over 18 hours. The dough is allowed to rise slowly in order for the beneficial lactobacilli (which aid digestion) to fully develop and the result is a unique, nutty flavour that can’t be obtained any other way.

Consumers are guaranteed that what they are eating is free from harmful artificial fertilisers and chemicals, and organic certification also promotes ethical farming practices.

The seeds and grains used in Bill’s breads undergo an age-old lengthy immersion process called ‘activating’. Soaking kicks off the germination process, increasing the nutrient value of each of the seeds. The sprouting process supports the breaking down of the problematic compounds that make conventional breads tough to digest.
