Recipe – Chunky Date & Walnut Biscuits (pictured)
Ingredients
1/2 cup chopped dates
125g butter
1 egg
1 cup wholemeal flour
1/4 cup self-raising flour
2 tbs brown sugar
1 tsp baking powder
3/4 cup chopped walnuts
Method
- Preheat oven to 160 degrees Celsius.
- Place dates and butter in a saucepan and cook gently until the dates have softened. Cool slightly.
- Combine flour, baking powder, sugar and walnuts in a large bowl.
- Add egg and cooled date mixture and stir until all flour is incorporated.
- Roll spoonfuls of dough and place on baking tray, flattening slightly for even cooking.
- Bake for around 15 minutes or until browned and risen.
